 Many people think grains all contain gluten but only wheat, rye, and barley are gluten culprits.  Quinoa is an old grain eaten by the Mayan and Aztecs.  Many other grains like rice, buckwheat, corn, millet, sorghum, and teff are also gluten-free.  Remember spelt is an ancient wheat variety and it does contain gluten.
